Smoked Perch Soup

Ingredients:

  • 150 g smoked perch
  • 150 g fresh perch fillet
  • 1 onion
  • Oil for frying
  • 1 liter of water
  • 6 tbsp cornflour (cornstarch)
  • 2 dl cream
  • Fresh dill, chopped
  • Salt
  • Black pepper
  • Lemon juice

Preparation:
Finely chop the onion and sauté it in a bit of oil until translucent.
Add the water and fresh perch fillets, then let the soup simmer for about 10 minutes.
Mix the cornflour with a little cold water until smooth and stir it into the soup. Bring the soup back to a boil so it thickens slightly.
Add the smoked perch and the cream, heat briefly but do not boil.
Stir in the chopped dill and season with salt, black pepper, and a splash of lemon juice.

Serve hot and enjoy!
