Kalakeitto mit Lachs – Die finnische Fischsuppe

History and Tradition

Kalakeitto dates back to a time when people in Finland primarily lived off the land. The soup combines simplicity and regionality: fresh fish, potatoes, and herbs were cooked into a hearty meal that quickly provided energy for the next fishing trip. Today, Kalakeitto is a symbol of Finnish coziness and closeness to nature – perfect for anglers who have spent the day by the water.

Ingredients (serves 4)

• 500 g fresh salmon fillet (skinless and boneless)
• 600 g waxy potatoes
• 2 medium carrots
• 1 onion
• 1 leek (optional)
• 1 liter fish stock or water with fish broth
• 200 ml cream
• 2 tbsp butter
• 1 bay leaf
• 5–10 black peppercorns
• Salt to taste
• Fresh dill (chopped) for garnish
• Lemon juice (optional)

Preparation

1. Peel and dice the potatoes and carrots, finely chop the onion, and slice the leek into rings.
2. Melt the butter in a large pot and sauté the onions (and leek) until translucent.
3. Add the potatoes and carrots, pour in the fish stock, and add the bay leaf and peppercorns.
4. Let simmer for 15 minutes.
5. Cut the salmon into pieces and add to the soup. Let it cook gently for 5–7 minutes until the fish is done.
6. Stir in the cream, season with salt and lemon juice, and do not boil afterward.
7. Sprinkle with fresh dill and serve.
